Bran-ana Muffins
Golden, soft and light bran and banana muffins.
INGREDIENTS
Butter 80g
Brown Sugar 60ml
Egg 1 large
Cake Flour 250ml
Baking Power 10ml
Bananas 2
Milk 125ml
All Bran Flakes 250ml
METHOD
In a bowl, beat the softened butter and brown sugar. Add in the egg and continue to beat until the mixture is light and fluffy. Sift the cake flour and baking powder into the mixture, and gently fold together. Mash the bananas and add them to the mixture along with the milk. Beat until everything is well combined, then add in the All Bran Flakes and mix thoroughly. Spoon the mixture into muffin cases, making approximately 12 muffins.
Bake at 180˚C for 20-25 minutes.
