Battered Onion Rings

Onion rings in a light and crispy, golden batter.

INGREDIENTS

Onions 2 large

Cake Flour 125g
Baking Powder 1 teaspoon
Salt 1 teaspoon
Turmeric pinch
Soda Water 200ml

Sunflower Oil for deep frying

METHOD

Peel the onions and slice into rings that are approximately 15mm thick. Gently separate the slices into individual rings and set them aside.

Sift all the dry ingredients into a mixing bowl. Gradually whisk in the soda water until you achieve a smooth batter with a consistency similar to custard. Add the onion rings to the batter, making sure each ring is evenly coated.

Heat the oil to 180˚C. Carefully place a couple of battered onion rings into the hot oil at a time. Fry them for approximately 2 minutes, turning occasionally so that both sides become golden and crispy. Once cooked, remove the onion rings from the oil and place them on a paper towel to drain any excess oil.
