Cupcakes & Buttercream

Golden vanilla sponge cupcakes made with Natura Sugars Fine Demerara Sugar piped with vanilla buttercream icing made with Natura Sugars Demerara Icing Sugar and topped with sprinkles.

INGREDIENTS

Milk 150ml
Butter 120g
Eggs 4 large
Natura Sugars Fine Demerara Sugar 250ml
Vanilla Extract 5ml
Cake Flour 400ml
Salt 2ml
Baking Powder 15ml

Natura Sugars Demerara Icing Sugar 500g
Butter 160g
Milk 50ml
Vanilla Extract 5ml
Food Colouring to decorate
Sprinkles to decorate

METHOD - CUPCAKES

Place the milk and butter in saucepan on a medium heat until the butter has melted, leave aside to cool slightly. Sift the flour, salt and baking powder into a bowl. Beat the eggs and vanilla extract well, gradually adding the Natura Sugars Fine Demerara Sugar a third at a time until thick and creamy. Fold in the sifted dry ingredients to the creamy mixture until smooth. Add the cooled milk mixture and stir in gently to combine, beat slightly to mix well. Spoon into cupcake cases.

Bake at 180°C for 12-15 minutes.

Remove from the oven and allow to cool.

METHOD - BUTTERCREAM

Sift the Natura Sugars Demerara Icing Sugar into a bowl and add the food colouring, softened butter, milk and vanilla extract and beat together well until light. Spoon into a piping bag and pipe onto the cupcakes, decorate with sprinkles.
